There are places that speak with the voice of time. Where trees tell stories and every season leaves its mark. Here, on the first Umbrian hills overlooking Perugia and sloping down toward Lake Trasimeno, the Conti Gigli Cervi Extra Virgin Olive Oils are born as a tribute to the richness of the Umbrian territory and the elegance brought to every bottle. Harvesting is done exclusively by hand, differentiated according to the various cultivars, and cold pressing takes place within four to six hours to preserve freshness, purity, and organoleptic balance. The position of the olive groves, privileged in altitude and exposure, guarantees our Oil a unique taste, given by the genetic and aromatic profile of the plants that cannot by its nature be replicated in any other product. The care taken in early harvesting, favoring quality over quantity, ensures a product of the highest organoleptic value and excellent nutritional richness.

TO THE TABLE
Production starts from a fundamental premise: it is not man who makes the oil, but the cultivars—which give it character—and the environment—understood as exposure, soil, irrigation—which attributes the intensity of its characteristics. The cool and breezy microclimate of the hills and the lake acts as a “thermal buffer,” moderating temperature fluctuations with milder cold and limited summer variations. This provides slow and regular ripening of the olives, which develop more delicate and persistent aromas. The soils overlooking the waters of Trasimeno, often sandy and mineral-rich, combined with a southwest exposure and a slope of about 400 m, allow the plants to achieve an optimal balance between vegetative vigor and fruit quality. The combination of microclimate, traditional cultivation methods with attention to plant and product care (healthy olives, early harvesting, and rapid pressing) ultimately gives the oil freshness, sensory balance, and long aromatic persistence.

Frantoio, Moraiolo, and Leccino are the three varieties, together with Dolce Agogia, present in our centuries-old olive groves and that tell the story of this land. Frantoio gives the oil freshness and fruity aromas, with notes of artichoke and green almond. Moraiolo, robust and decisive, enriches the oil with character, giving it body and a strong herbaceous note. Leccino harmonizes everything: its sweeter and more delicate taste balances the more intense notes, providing roundness and smoothness. Dolce Agogia, finally, offers a harmonious and balsamic taste, bringing balance to the oil while conferring a particular complexity of flavor. Each variety is harvested and processed at the right moment of ripeness, and what is obtained is an oil that develops decisively and closes with a clean and persistent finish.
